These cutting boards are made from Granadillo, a hardwood from Mexico and Central America which combines functionality with an artistic beauty similar to Cocobolo. Granadillo has a dramatic dark brown color with black stripes and swirls and occasional beige/yellow sapwood. Color may darken with age or oiling. The grain pattern is very hard and dense, perfect for a cutting board. It's buy not uncommon to see dramatic black curves and swirls, all of which can be seen in this very functional but artistic wood.
The cutting board is made using the long grain of the wood to bring out it's full beauty. Most cutting boards are made from walnut or maple which are much softer woods in the Janka Wood Hardness Scale of 1010 to 1450. It is for this reason, most cutting boards using maple or walnut are made using either end or side grain which does not allow for the the inherent beauty of the wood to be seen. Granadillo has a Janka scale of over 2700 which allows for a cutting surface with comparable durability of end and side grain models, but with the natural beauty of the wood in plain sight.
The base is recessed giving a “floating” effect to the edges. The cutting board was finished using a “food safe” penetrating Danish-type of oil, which was allowed to cure for 3 months, further rendering it “food safe”. The lustre of the wood can be maintained using any food safe oil such as butcher-block oil, Walnut oil or Coconut oil. Knife marks can be sanded out if desired followed by re-coating with oil.
